Each week I make and meal prep a few items to have on hand for simple and healthy items to grab when we are hungry. My kids need healthy snacks after school, and sometimes I need a quick pre- or post-workout healthy snack. I have recently stopped eating sugar, so I was on the hunt for something that I could eat; I wanted a sugar free cookie recipe that didn’t include any of those funky fake ingredients. This creation now has a place in my refrigerator weekly with good reason: these 3 ingredient cookies are incredibly easy to make, and satisfying at the same time.
Ingredients
- 2 ripe bananas
- 1/4 cup + 1 TBSP coconut flour
- 1/4 cup nut butter

Instructions
Preheat oven to 350. Line a baking sheet with parchment paper.
In a medium bowl, mash bananas with a fork. Add nut butter and coconut flour; mix to combine. Place 9 dough bites on the parchment paper and flatten into cookies. Bake for 13-14 minutes.
Store in the fridge for up to 4 days.
