Melt In Your Mouth Chocolate Chip Banana Bread

This melt in your mouth gluten free chocolate chip banana bread is probably one of my all-time favorite healthy treats.

Ingredients

  • 1 3/4 cups almond flour
  • 1/2 tsp. salt
  • 2 tsp. cinnamon
  • 1 1/3 cups mashed bananas (sometimes I’ll include more)
  • 2 eggs
  • 1/2 cup melted coconut oil
  • 1 tsp. baking soda
  • 2 tablespoons almond butter
  • ¾ cup monkfruit sweetener
  • 1 tsp. vanilla extract
  • 3/4 cup Hu Kitchen dark chocolate gems

Directions

Preheat oven to 350 degrees F Lightly grease a 9×5 inch loaf pan, set aside.

In a large bowl, combine flour, baking soda, cinnamon, and salt, set aside. Stir in eggs, coconut oil, vanilla, monkfruit, and mashed bananas until well blended.

Stir banana mixture and chocolate chips into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.

Bake in preheated oven for 50 to 55 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for at least 15 minutes, then turn out onto a wire rack and cool another 30 minutes. Slice and serve warm!
