
Mushrooms are one of nature’s best superfoods, given their incredible immune-boosting benefits, as well as their abilities to fight cancer and inflammation. Here’s one of my favorite simple (creamy) mushroom-soup recipes!

Ingredients
- 4 cups chicken broth
- 3 cloves garlic
- 2 pounds fresh mushrooms (lion’s mane, maitake, shiitake, cordyceps)
- Herbs (parsley, cilantro)
- 1 teaspoon himalayan pink sea salt
- 1 teaspoon ground pepper
- 3/4 cup almond flour
- 4 cups coconut milk
- 3 tablespoons extra virgin olive oil

Add all the ingredients to the instant pot.

Set timer for 15 minutes.

Release the pressure using the natural-release method, about 10 minutes. Release remaining pressure carefully with the quick-release method, 2 to 3 minutes. Unlock and remove the lid.

Add to Vitamix and blend. Enjoy!
